Post your UI so other people in the same role/class can get ideas! I finally had time to get my UI into semi-decent shape so I thought I'd post it here for anyone who's interested in a warrior tanking UI. It's not my final UI but it's getting pretty close.
It's a variant on the UI I used in WoW 1.0 (I tanked on this toon in WoW 1.0 but shelved him for TBC... now he's back...)

It probably looks kind of crazy at first so here's what's going on...

What's going on here:
Basically, my goal is to put every piece of important information as close to the middle of the screen, where the mob I'm tanking is positioned, as is possible. (Remember the days when you actually had to watch for Anub's butt to go up in the air to figure out if Locust Swarm was coming?)
So for starters I use xperl to put my player frame, target frame, and target-of-target right in the middle there. It might seem obtrusive but target / ToT aren't visible unless I'm actually targeting something.
Buffs I apply to my target show up as extra big in Xperl so I can see them counting down and don't forget to refresh them.
My own buffs/debuffs appear under me (not many in this screenshot but it can get to 4-5 rows). Right under my unit frame you can see ten buttons -- what I'm doing here is I want to see which of my main threat building and mitigation/"oh sh*t" cooldowns are up at any given time. I set these and the stance icons up using Bartender 4, even though I never actually click those buttons it was the quickest and dirtiest way to get that info in the middle of the screen. BT4 gives visual indicators for out-of-range, out-of-rage, on-cooldown, etc. so you can see it all.
All my other hotbars are at the bottom of the screen, this is Bartender again. I don't look down there much. The top is bigger because that's stuff I don't hotkey; generally I don't think it gets pressed enough to deserve a hotkey so I'm a clicker when it comes to those buttons.
The three smaller rows at the bottom are mostly there for if I forget the hotkeys for something. I'm still tweaking my hotkeys bit, the rule of thumb (no pun intended :P) is for stuff that's most important to be near my index finger, stance-specific stuff to be on a number key (the very bottom bar changes when I switch stances), and other somewhat important stuff to just be somewhere on the left-hand side of the keyboard. The bindings are kind of random other than that based on ingrained habits but for the most part they work well for me... thinking of finding a keybind for Taunt that doesn't use SHIFT though.
